Snails

Among the various things for which Liuzhou is famous (see coffins below) are its gastronomic delights. It seems that every city in China has its speciality which, as everyone knows, is the best in China. Some years ago, I lived in Hunan and the local "world famous" dish was an absolutely delicious duck stew, laden with chillies. It was heaven!

While I can find ducks in Liuzhou, they are not up to the same standard. But Liuzhou has its very own speciality!

Welcome to the wonderful world of 
Luosifen ! Sounds inconsequential, doesn't it? And so it is!

Luosifen is a dish of rice noodles in soup with added beancurd (tofu) stick , shredded pickled bamboo and whatever green vegetable is in season.



What I forgot to mention is that the soup base is made from snails. You don't usually get any of the actual snails swimming about in your noodles. They're much too valuable and are used in other, more expensive, dishes.



Luosifen is incredibly popular (and cheap) and long lines form outside the 'better' places. At a mere ¥1 or ¥2 a bowl for a filling meal, who can complain?

I'd still prefer the duck!

The duck dish I referred to was the speciality in Zhijiang (芷江) in western Hunan. I only ever knew it as Zhijiang Duck.
